Sticky Toffee Pudding

6 oz dates (chopped)
1 c boiling water
1 tsp baking soda
2 oz butter
¾ c sugar
1 egg
1 c flour
1 tsp baking powder
1 tsp vanilla
Sauce
3/8 c brown sugar
2 oz butter
2 Tbsp double or single cream
Use a 8x8 pan
Preheat oven to 350.
- Pour boiling water over the dates and baking soda. Leave to stand.
- Cream the butter and sugar together in a bowl until pale in color.
- Gradually stir in the egg, flour and baking powder.
- Stir in the dates with the liquid. Add vanilla.
- Put the mixture into a greased 8x8 pan.
- Bake for approximately 40 minutes until risen and firm to the touch.
- Make the sauce by boiling the ingredients together for 2 minutes.
- Pour over the warm pudding/cake.
